Basic skills of hand-brewed coffee with filter paper

  Temperature control: In order to achieve the best brewing effect, the ideal water temperature of coffee should be close to 90 degrees Celsius. Therefore, it is necessary to cool down the hot water slightly after boiling, and use a thermometer to accurately measure to ensure that the water temperature is moderate.

  The necessity of a professional hand-brewed pot: It is essential to have a fine-mouthed hand-brewed pot, which can ensure a steady and continuous flow of water, which is essential for the taste of hand-brewed coffee. It is not recommended to use an ordinary kettle as a substitute.

  Choice of filter cup and filter paper: The specifications of the filter cup are diverse, including the number and size of the extraction holes and the shape of the filter cup. Experienced brewers will adjust the brewing method according to the characteristics of the filter cup to extract the best flavor of coffee.

  Coffee powder is ground and used immediately: Coffee beans should be ground immediately before brewing to maintain their freshness and rich aroma. Therefore, a grinder is also an indispensable tool for hand-brewed coffee. The coarseness of the coffee powder can be adjusted according to personal taste. It is generally recommended to use medium grinding to avoid being too fine.

  Preparation steps

  Filter paper pretreatment: Fold the two sides of the filter paper along the crease, and fold the bottom and side joints in opposite directions to ensure that the filter paper fits tightly with the filter cup.

  Water temperature detection: Use a thermometer to measure the hot water temperature, which is recommended to be between 85℃ and 92℃. First inject a small amount of hot water to moisten the filter paper and preheat the filter cup at the same time.

  Weighing coffee powder: Take about 15 grams (equivalent to the amount of two coffee spoons) of freshly ground coffee powder for later use.

  Brewing process

  Initial water injection: Gently inject a small amount of hot water into the center of the filter cup to expand the coffee powder due to the internal gas to achieve a steaming effect.

  Continue to inject water in circles: Inject hot water again from the center, and then slowly inject in a clockwise direction from the inside to the outside. Be careful to avoid the water column touching the edge of the filter cup. Inject water again before the coffee powder layer collapses. If the operation is proper, concentrated white foam will appear in the center of the powder layer. Continue to inject water in circles until the measuring cup reaches the 200 ml mark.

  Mix and enjoy: Gently shake the measuring cup to evenly mix the coffee liquid, then pour it into a coffee cup and enjoy.
